Ingredients:
Truffles:1 1/2 Tbsp. Tart Cherry L’Evate You Daily Vitality Greens
1/2 cup rolled oats
1/3 cup unsweetened cocoa powder
1 1/4 cup pitted dates (soaked in warm water until soft)
1/4 cup almond butter
1 tbsp. coconut oil
1 tsp. raspberry extract
Chocolate Coating & Garnish:
1/2 cup melted dark chocolate chips with 1 tsp. coconut oil
1/2 cup melted dark chocolate chips with 1 tsp. coconut oil
1 1/2 tsp. chopped almonds or walnuts (optional)
2 tbsp. melted white chocolate (optional)
2 tbsp. melted white chocolate (optional)
Sprinkle of greens powder (optional)
Directions:
- Combine oats, cocoa powder, and greens in a blender until a flour-like consistency forms.
- Add soaked dates, almond butter, coconut oil, and raspberry extract to the blender until a dough-like consistency forms.
- Roll dough into tablespoon size balls and freeze for at least 30 minutes. Meanwhile, melt your dark chocolate chips with the coconut oil in a double broiler or in the microwave. We recommend 30 seconds at a time to reduce burning.
- Remove the truffles from the freezer and dip into the melted chocolate using a tooth pick or a fork. Place on a parchment paper lined baking sheet.
- Top with your chopped nuts, a sprinkle of greens, or a drizzle of white chocolate.
